This Memorial Day will be a little different for me and my family since we’ve been living at the beach all year. We are planning to have a low key vegetable forward barbeque with friends. I enjoy entertaining but I find it stressful to have to scramble at the last minute when getting ready for guests to arrive. I love recipes that can be made ahead so I can get ready in a more leisurely way. Here’s what I am planning this year.

Lemon Berry Trifle: For dessert for a group I love making a trifle since it’s easy to make ahead and looks impressive. For this lemon berry trifle I swapped out the lemon for a lime, giving it a zestier kick. This can also easily be decorated with whatever fresh berries you have to complement the flavor.
Grilled Vegetable Salad: This salad incorporates one of the best things about Memorial Day weekend, turning on the grill. I love the Greek flair from the oregano, mint and some feta cheese.
Sesame Pasta Salad: This twist on a traditional pasta salad is made with ingredients like toasted sesame oil, peanuts and cilantro.
Grilled Leek Potato Salad: I’m going to try this grilled leek potato salad. This recipe gets a lot of flavor from a vinaigrette made with mustard and cider vinegar.
Ginger-Soy Marinated Chicken: The great thing about a marinade is that you can let your chicken sit as short as an hour before cooking or as long as overnight. That means I can throw together this recipe the day before my barbecue.
Ginger Sangria: Every barbeque needs a signature cocktail and this year I am making a ginger sangria. This one sounds ultra refreshing as it’s made with white wine, peaches, and a ginger syrup.
Amy’s Favorite Memorial Day Traditions
Before we had kids, my husband and I always spent the holiday weekend at the shore. This year it will be fun for us to already be situated at the shore to kick off our summer.
For the next few months, I’m trying to relax, spend more time with family, and savor each weekend. I’m also thrilled to share that we have instituted summer Fridays at Printfresh. It will be great for us to be able to take time off as a team so we can all relax! To celebrate, we’re all breaking out our pajama shorts and favorite camis.
